Eating Our Way Through Baja

Bufilito Veggie Burger. Check out that Portabello Mushroom. This was delicious.

Cholesterol overload.
Jumbo prawns stuffed with cheese and wrapped in bacon.
I could barely finish just these 4 prawns.

Blue corn quesadilla.
This is corn dough made out of blue corn.stuffed with meat, cheese, onions, and what ever else they decide. Fry it and serve. The flat item in the photo is also a blue corn patty stuffed with beans and potatoes and cheese.

Very tasty.

They call them stuffed potatoes. It consists of potato, cheese, Arachara, corn, onion, topped with Pico de Gallo, Guaqamole and Salsa of  your choice.

Elote in a cup.
Very popular in Mexico. Sold by street vendors on the Malecon of La Paz.
Corn, cheese, mayonnaise and hot sauce in a cup.  Actually quite good.

Char-Grilled White fish served with an array of vegetables smothered in a sweet/tart sauce. YUMMY

Fresh out of the boiling fat. Fried pork rinds.
This fellow was not pleased that we did not care to buy his delicious deep fat fried rinds.
I just couldn't do it.
I would like to taste them to compare to the bags of rinds they sell in the  U.S.

And then there's the Food Parties on Coyote Beach.
